John Dee Silver Select Grade Scotch Filet, or elsewhere in the industry known as "Cube Roll" or "Ribeye - Lip Off". A minimum of 100 day grain fed, tender and juicy, cut into more thinner slices for that quick cook, pan fry, so no need for big heat or big grill cooking.

The Ribeye part is a muscle does less work than striploin (sirloin), so the meat quality is softer, and it is a highly popular grill cut that is ideal for the BBQ alongside the sirloin and tenderloin. Also, its very popular as a roast where the flavour stews inside the meat for hours.

[Cooking] We recommend carefully cooking in a pan or grilling on a BBQ. Reverse sear after a long roast, or Sous Vide. Since ribeye has a brilliant flavour, you can enjoy it with just salt and pepper without seasoning or sauce. However, a roast can be topped off with a nice gravy.

[TIPS] Preparation from chilled or frozen, best to thaw or warm up the beef by placing in a bowl of warm water in its vac-pack bag for 30-40 min. The trick is to get the core of the cut up to room temperature, that way you do not burn the outside while trying to cook the centre. Otherwise you will lose the quality of the product.
